Pumpkin Honey Soup

For a warm and tasty treat for your belly this winter try this Pumpkin Honey Soup, I found in the book Health and Healing with Bee Products

Ingredients

  • 2 cups pumpkin, cut in 1" cubes
  • 1 med. sweet potato peeled and cut into 1" cubes
  • 1/2cup carrot, cut in 1" cubes
  • 1/2 white onion, diced
  • 2tbsp extra virgin olive oil
  • 3 cups vegtable stock or water
  • 1tbsp + 1/2 tbsp unpasterized honey
  • pinch white pepper
  • pinch sea salt
  • 2 tbsp butter
  • 1 cup kefir or butter milk
  • 1tsp fresh lemon juice
  • fresh cilantro,chopped for garnish

Directions

Heat oil in a large pot and saute pumpkin, sweet potato, carrot and onion for 3-4 minutes until tender. Add vegtable stock, 1 tablespoon of honey and seasonings; cook for 15 minutes until all ingredients are soft. Place soup in a blender and slowly add kefir while blending. Blend until smooth and velvety. Return to pot, stir in butter and lemon juice and keep warm. Pour soup into bowls, drizzle with remaining honey, sprinkle with cilantro and serve! Yummy!!!!
